Kung Pao Chicken pairs best with slightly sweet and clean acidic white wines, such as an Off-Dry Riesling, Gewürztraminer, or Chenin Blanc.  A fizzy red wine like Lambrusco or a Beaujolais are also an excellent choice with Kung Pao Chicken.

A quick side note – Kung Pao Chicken in the Asian Continents is considered to be much more spicier than what is served in North America. If you want to cool down the heat – choose bubbly, slightly sweet and off dry wines. To turn up the heat, select bolder and wines with higher amounts of alcohol
