Kung Pao Chicken pairs best with slightly sweet and clean acidic white wines, such as an Off-Dry Riesling, Gewürztraminer, or Chenin Blanc.  A fizzy red wine like Lambrusco or a Beaujolais are also an excellent choice with Kung Pao Chicken.
