Château d’Yquem is a Sauternes and pairs best with Foie Gras, Roquefort Cheese, Apple Desserts, Roast Chicken, and Shellfish like Lobster.
With high acidity, and decadent flavours of honey, apricot, apple, honeycomb, butterscotch, nutmeg and citrus, Château d’Yquem will pair up nicely with fruity desserts, salty cheeses, spicy Asian cuisine and rich dishes like Foie Gras quite nicely. I find Château d’Yquem and dessert pairings too exhausting for my taste buds, so I much prefer savoury dishes with Château d’Yquem as to sweet dishes.
Château d’Yquem is the only Sauternes given the classification of Premier Cru Supérieur, meaning it is seen as the most superior Sauternes money can buy. The wine can be aged for over a century, and as it ages, the fruiter notes fade while flavours of vanilla, caramel, nuts and toffee become stronger.
